Abstract
Questo studio analizza, attraverso alcuni esempi, il ruolo giocato dalle carte figurate a tema alimentare nella costruzione delle cucine regionali. Soffermandosi su esempi dei contesti francese e italiano, il lavoro evidenzia come la cartografia possa diventare uno strumento significativo nel processo di patrimonializzazione delle produzioni locali. Se in Francia è nell’età post-rivoluzionaria che si assiste all’elevazione, a cui contribuisce la produzione cartografica, del cibo come monumento dei territori, è nell’Italia fascista che si afferma una nuova modalità di patrimonializzazione degli alimenti legata all’identità regionale e veicolata attraverso la pubblicistica turistica. Nel testo si sostiene che le carte dei territori alimentari, di particolare successo nel corso del Novecento e alla base delle contemporanee tassonomie del gusto, nascono tra ‘800 e ‘900 come risultato di nuove modalità di approcci al territorio determinati dalla scoperta e analisi delle province diventando nel tempo, in particolare attraverso il discorso turistico e la retorica dello stato nazionale, uno strumento di promozione dei territori e di affermazione di una nuova immagine della nazione.
This study analyses, through a few examples, the role played by food-themed figure cards in the construction of regional cuisine. Dwelling on examples from the French and Italian contexts, the work highlights how cartography can become a significant tool in the process of pat¬rimonializing local production. If in France it is in the post-revolution¬ary age that we assist to the elevation of food as a monument of the territories, it is in Fascist Italy that a new way of patrimonialization of food linked to the regional identity and conveyed through the tourist publicity is affirmed. The text argues that the maps of food territo¬ries, particularly successful during the 20th century and at the basis of contemporary taxonomies of taste, were born between the 19th and 20th century as a result of new ways of approaching the territory de¬termined by the discovery and analysis of the provinces. These maps become over time, in particular through the tourist discourse and the rhetoric of the national state, an instrument for the promotion of the territories and the affirmation of a new image of the nation.
